COD fillet with courgette

cod
Butter or spread 10g
Squeeze of lemon and a little rind grated
Salt & pepper
1 garlic clove grated
5g pepperoni or similar cut very small

Mix all the ingredients together and spread over the cod, add to a skillet and cook for a couple of minutes then put in the oven for 5-10 minutes till cod cooked all the way through.

Put the courgette put through vegetable spaghetti maker, or buy ready made from the supermarket, add salt and pepper and put in microwave or stir fry for 3 mins and drained. 


Banana ice cream

Freeze slices of banana overnight, add to blender, add 2 tablespoons of coconut milk and blend, at first it goes bitty but keep blending and its soon very smooth, if you like soft ice cream eat it immediately or put back in freezer for an hour.

2 tablespoons cream cheese

2 eggs, separated

1/4 teaspoon baking powder

Preheat oven to 150 C / Gas mark 2. Line a baking tray with baking paper.

Mix cream cheese and egg yolks together until smooth.

Place egg whites and baking powder in a glass, metal, or ceramic bowl; beat together until stiff peaks form.

Fold cream cheese and egg yolk mixture gently into egg whites until just combined and light yellow in colour.

Spoon the batter onto the prepared baking tray in mounds about 10cm in diameter, flattening peaks with the back of the spoon.

Bake in the preheated oven until golden brown, 17 to 20 minutes.

Tip

If cream cheese is very cold or solid, place in a microwave-safe bowl and warm in the microwave at 10-second intervals until softened, about 30 seconds. Cool to room temperature,

Chicken breasts stuffed with spinach and Feta

4 Chicken breasts

1 tablespoons

2 tablespoons olive oil

1 (16 ounce) bag spinach (frozen works great)

1 cup feta cheese

12 cup butter (melted)

Preheat oven to 180

Prepare chicken for stuffing.(You can either, slice 2 thick chicken breasts in half and make 4, or beat 4 chicken breast until thin and wide.).

Cook spinach in garlic and oil on top of stove until done.

Add in feta cheese and mix well. (You can add as much as you like)

Distribute spinach mixture onto each chicken breast. (You may have some leftover).

Wrap chicken around mixture and secure with a toothpick.

Place in glass baking dish and pour butter over them or spray with light oil spray

Cook for 30 minutes and serve.

I usually have spinach mixture left over and just serve it as a side dish. It’s so good that people always want more!

Toss salad with chicken and add a splash of sweet chilli sauce
